Chicken Tortilla Soup!


So I have also discovered my love of food and cooking for other people. I want to put recipes and pictures of my creations on here (that is the motivation talking). I have an awesome Tortilla Soup recipe that I made recently, super easy, super healthy and super cheap.

So here it is.

Start cooking 2 large chicken breasts, make sure to season these, you'll end up with more flavor, cook these until done and shred into bite sized pieces.

In a large soup pot

Saute (not caramelize) 1 cup of chopped carrots, onions, celery for about 10 minutes at a low heat in olive oil.

Mince 2 cloves of garlic, add this to sauteed veggies, you'll also want to add cumin, chili powder, minced jalapenos if you feel you need the heat and any other spice (salt, pepper, etc)

Let this cook together....for a few minutes

Add 5 cups of chicken stock, 28 oz of diced canned tomatoes, 1/2 cup chopped cilantro, your cooked chicken....let simmer

Slice up some tortillas into strips and add right before you serve...top with sour cream=amazing!!!

You can also throw in diced avocado, corn, black beans, rice?, etc...

I add lime to mine in the beginning stages as well..squeeze the full lime into the base and leave the whole thing in the soup while it is cooking...you don't have to do this if you're not a lime fan, however I can't get enough of it.
